Lactofructose is chemically named 4-O-beta-D-pyran galactosyl-D-fructose with a molecular weight of 342 and is isomer with lactose. The product of lactulose is light yellow, clear, viscous and sweet. Its crystal is white and irregular powder with relative density of 1.5, melting point of 169 C, soluble in water and solubility of 76.4 (+1.4%). Its sweetness is equivalent to that of lactose less than sucrose, which is about 48%-60% of sucrose. It has the feeling of refreshing and mellow, low viscosity, low calorific value, high safety, good stability and no Maillard reaction.
